Here is the delicious Ackee and Saltfish recipe from Donna Carnegie.  Donna runs The Gord Martineau  Cedarbrae Breakfast Club:   Ackee with Saltfish Soak the saltfish in cold water for 1 hour Pour off the water Add fresh water and cook fish until tender Heat cooking oil and sauté onions, garlic, scallions, tomato, scotch bonnet peppers and sweet peppers Add flaked saltfish, ackee and black pepper Cover and allow it to cook over heat for 5 minutes Serve with rice and/or dumplings.
