Here is the delicious Ackee and Saltfish recipe from Donna Carnegie.  Donna runs The Gord Martineau  Cedarbrae Breakfast Club:


 

Ackee with Saltfish

  • Soak the saltfish in cold water for 1 hour
  • Pour off the water
  • Add fresh water and cook fish until tender
  • Heat cooking oil and sauté onions, garlic, scallions, tomato, scotch bonnet peppers and sweet peppers
  • Add flaked saltfish, ackee and black pepper
  • Cover and allow it to cook over heat for 5 minutes

Serve with rice and/or dumplings.
